Carbonic Maceration

Carbonic Maceration is a winemaking technique largely based in Beaujolais, France in the making of Gamay. This is when whole grape clusters are fermented in an oxygen free environment. Carbon Dioxide is then added to the tank bolster intracellular fermentation within the grape itself.
