Today on BT we shared some incredible barbecue dishes that were dressed with Caribbean and African dressings and herbs. Here is a run down of what we shared.
Mer Soleil 2022 Chardonnay + Beef Burgers and Pineapple Chow
The Mer Soleil 2022 Chardonnay just happens to be the brands 30th Anniversary edition. This is a consistent mountain sourced Chardonnay that retains its backbone of acidity. We paired this Chardonnay with this dish because we took our lead from the dominant flavours in the pineapple chow. Link here for a recipe on how to make Pineapple Chow. When paired together the Chardonnay's ripe fruit create a wonderful congruent pairing with the chow.
Khush Pinot Noir Pet Nat + Suuya Ribs
The Khush Pinot Noir Pet Nat is a local wine that will bring you to thoughts of warm patio days. This wine is giving and highly refreshing on the palate. We paired this Pet Nat with the Suuya Ribs because of its texture and citrus mouth feel. Each sip cleanses the palate for the next bite.
The Khush Pinot Noir Pet Nat can be found at Grape Witches, Tommy’s Wine Bar, Ladybug Wine Bar, Tammy’s Wine Bar, and St Lawrence Farmers Market on Saturdays.
Aslina Cabernet Sauvignon + BBQ Jerk Chicken
Mouth watering yet!!
This was a well-talked-about pairing at the show because many were surprised by the deliscious outcome.
The Aslina Cabernet Sauvignon has a plush red and black fruit palate layered with vegetal notes and smartly integrated oak. We paired this Cabernet Sauvignon with the BBQ Jerk Chicken because we wanted to accentuate the clove and allspice in the jerk seasoning as it also appears in this wines flavour profile. Note, we served this Cabernet Sauvignon at 15 ° and it was perfect.
All of the dishes showcased today were made by Chef Adisa Glasgow of the Noir Experience, a Black-owned organization composed of underrepresented chefs, strategists, directors, and creative industry professionals.
