About Sémillon
Sémillon is a grape I love for its depth on the palate.
Originating from Bordeaux, France, Semillon is particularly famous for its role in the sweet wines of Sauternes, where it is susceptible to noble rot, resulting in luscious, honeyed wines. However, this pedestal position of a regalled wine was once at risk.
As consumer choices drifted towards dryer wines in the early 2000s, many grape growers opted to limit Sémillon planting to focus on grapes known for producing sought after dry white wines. In Ontario, Sémillon is loved for its dry style, offering a crisp and zesty profile that evolves into complex flavours over time. With that said, growing Sémillon in Canada is not for the faint of heart. These vines require mild winters to thrive.
Climate change has made Sémillon in Ontario possible, but one of the elements of climate change is its variability. This vintage could very well be starkly different from the next, based on what our climate state beholds. So, if you can get your hand on a well made Ontario Sémillon, you should pick it up!

About Rosewood Sémillon 2022
The Rosewood Sémillon 2022 is aged for nine months in stainless steel, undergoing full malolactic fermentation, with sulfites added only prior to bottling. The result is a wine that showcases a lovely weight of apple and pear fruit, complemented by notes of peach and spice, such as white pepper. The texture is nicely balanced, leading to a refreshing and zesty lemony finish.
We were lucky enough to pair this wine with a crab and queso crostini, and the weight of this wine on the palate produced a stunning congruent pairing.
