Today's wine find lands us with the Tawse Spark Brut Sparkling, a traditional method sparkling wine that is lively, and made from grapes sourced from the Niagara Peninsula.
About Tawse Winery
Tawse Winery was founded in 2001 in Niagara-on-the-Lake, Ontario. The winery produces a range of varietals, including Pinot Noir, Chardonnay, and Riesling, all of which showcase the unique characteristics of the region.
The Tawse family has a rich history in winemaking that reflects their deep-rooted passion for the craft and the land. Their commitment to quality and sustainability is evident in their adoption of biodynamic farming practices, which they believe enhances the expression of their vineyards.
In 2015, the family purchased vineyard land in Burgundy, France, allowing them to expand their winemaking footprint.
About Tawse Spark Brut Sparkling
The Tawse Spark Brut Sparkling is a traditional method sparkling wine made from hand harvested and sustainably grown Ontario grapes. This sparkling is a blend of 72% Pinot Noir, 23% Pinot Gris, and 5% Chardonnay, and while Pinot Gris may not be one of the grapes you find in traditional French sparkling wine, once you try this wine, the place this grape plays completely makes sense.
On the nose, this wine is fragrant with bellows of ripe citrus, pear, and green apple. On the palate, it is a medley of English muffin, Meyer lemon, and pear custard. These flavours are all backed by solid structure.
