Why You're Probably Drinking Red Wine Too Warm

For years, wine drinkers have adhered to the guidance that red wine should be served at 'room temperature. But where did this notion come from, and why is it leading us to drink our reds too warm? The truth is, room temperature is a subjective term that has evolved over time, leading to a misinterpretation of the ideal serving temperature for red wine.

The Historical Context


The concept of serving red wine at room temperature originated in a different age. Imagine old European castles with thick stone walls and 'hearths', entirely different from modern central heating. Wine was stored in cellars, typically underground, where temperatures remained a consistent 12–14°C. This was the perfect temperature for preserving wine allowing it to mature slowly. When brought up from the cellar, the wine would be allowed to warm to the room's temperature, which, before central heating, was around 18–19°C. This practice ensured that the tannins in aged red wines were not bitter and the aromas were distinct.



The Modern Misunderstanding


Today, our homes are typically heated to around 22°C or higher, and at restaurants, depending on the depth of wine program, wines can sometimes be stored areas subject to a temperature of 26°C, especially if close to the kitchen. Serving red wine at these temperatures can cause the alcohol to become too prominent, leading to an imbalance in flavour, and quite frankly, a hastening deterioration of the wines structure. The wine may seem heavy, and its freshness and vibrancy can be lost.



The Ideal Temperature for Red Wine


So, what is the ideal serving temperature for red wine? It depends on the style of the wine. Lighter-bodied reds, such as Pinot Noir and Gamay, are best enjoyed at 14 –16°C to preserve their delicate aromas and acidity. Medium to full-bodied red wines should be served between 15 – 18°C.


While the idea of serving red wine at 'room temperature' has historical roots, it's a concept that needs to be re-evaluated in the context of modern living.


Never, ever, serve red wine at room temperature today. If you, you are robbing yourself of all that wine has to give.
